The Perfect Summer Sunday: Dock To Dish Delights & Bubbly On the Beach
What could be a more perfect way to close out the weekend than a casual caviar & bubbles afternoon beach party with a great group of girlfriends? KDHamptons and my friend Melanie Brandman cohosted the fun fête at her Southampton beach cottage on the bay as it was a scorcher this weekend. We kept the dock to dish menu fresh and light and took a dip in the bay after lunch to cool off. Here’s what we served at the lunch as well as my easy new Oshēn salmon recipe you should try at your next summer party. Watch my IGTV video of the event HERE.
Psst! Today is also the kickoff of National Prosecco Week and Mionetto Prosecco is hosting a contest to win their delicious wine (see further below for details).
We surprised guests with a cool new Hamptons summer party trick: The CaviAIR Car (above) which is a vintage Defender that has been tricked out to serve caviar parties out of the back with an expert server. Throughout the summer, the car will be a pickup location in the Hamptons for pre-ordered CaviAIR packs & kits. The CaviAIR Car will be parked in Bridgehampton, Southampton, East Hampton, Sag Harbor and Montauk throughout the weekends. For more info or to book the for your own party HERE.
The Menu:
*Mionetto Prosecco Rosé
*Grilled Oshēn Salmon from Chile with Lemon, Thyme and Dill (see recipe further below)
*CaviAIR Golden Russian Osetra, Imperial Kaluga, and Russian Osetra served with Creme Fraiche with Chives,
Brown Butter Whipped Eggs, Fresh Dill, Roship Cucumbers, and North Fork Potato Chips
*Spinach, Feta, Strawberry and Walnut Salad (shopped from Halsey Farm)
*Handmade cake pops from Sweet Flour Pastry Shop
Oshēn salmon is my favorite new delicious discovery this summer and it comes directly to my front door from southern Chile. How’s that for dock to dish? Vibrant, delicious, and sustainably raised Atlantic salmon, it has a perfect combination of healthy omega-3s (DHA & EPA). There are no hormones or heavy metals included the fish is guaranteed seven days fresher than buying it at your local retailer.
EASY 3-STEP GRILLED LEMON SALMON RECIPE FROM OSHEN
Ingredients:
1 large Oshēn salmon fillet
2 tbsp. olive oil
1 handful of fresh dill and thyme
1 lemon, juiced
Salt and black pepper to taste
Directions: If you’re feeling fancy, consider throwing your salmon on the grill. If not, a saucepan or grill pan will do the trick.
STEP 1: Add lemon juice and chopped thyme into a large glass pan, and place the salmon fillet inside. Make sure to evenly spread the marinade throughout the fish. Place in refrigerator for 30 minutes prior to cooking.
STEP 2: Once the salmon is marinated, heat olive oil on high in a heavy saucepan or grill pan. If you have an outdoor grill, now is the time to turn it on.
STEP 3: Once sizzling, add salmon fillet skin-side up and grill until cooked through. Flip onto the other side for two to three minutes, before turning back. When the fish flakes easily and has a golden-brown crust, you’ll know it’s ready. Enjoy!
