Caprese Salad
[ingredients]2 balls of buffalo mozzarella
extra virgin olive oil
white wine vinegar
1 shallot
fresh basil
sea salt
3 beefsteak tomatoes[/ingredients]
[instructions]Finely mince half of a shallot, add to a small glass bowl with 3 tbsp of white wine vinegar and 6 tbsp of olive oil, add two shakes of sea salt, mix with whisk and let sit.
Slice tomatoes in quarter inch slices. Slice the mozzarella in quarter inch pieces.
Zig zag a layer of olive oil mixture on a large platter, place tomatoes in one layer, mozzarella on top of tomatoes and top with the rest of the olive oil mixture. Sprinkle chopped basil and serve 4-6 people.[/ingredients]
