Carrot Salad
[ingredients]3 large carrots
1 bunch parsley
2 cloves crushed garlic
3 tablespoons fresh lemon juice
3 tablespoons olive oil
salt & pepper to taste[/ingredients]

- Shred carrots by hand or on a food processor.
- Loosely chop parsley.
- Combine all ingredients in large mixing bowl.
- Serve chilled.
