Rice balls

Gluten Free Rice Balls

 

KDHamptons resident foodie, Jennifer Rizzo, shares, “These homemade gluten free rice balls are a big hit with my family, or if I need an easy appetizer to serve at a dinner party. Enjoy!”

 

Ingredients:

2 cups cooked and cooled white rice
1/2 cup (but runneth over a little) grated parmesan cheese, I use pecorino romano locatelli
1 organic egg
I also added in some fresh diced parsley, not measured roughly 2tbsp of the flat italian variety
☝️mix this all together in a bowl with your hands.
8-10 cubes of fresh mozzarella, ready and waiting on the side (depending on how big you like your balls, this recipe yielded 10 for me

Instructions:

Form the balls in your very sticky hands and put a cube of the fresh mozzarella in the middle…once you have rolled all the balls, set aside on wax paper and prepare:

1 organic egg beaten
1 cup gluten free italian style breadcrumbs

Next, roll the balls in the egg, then in the breadcrumb mixture and fry for just a few
minutes while rotating them…to your desired crispiness. They should be golden brown and cooked throughout, my group likes them a little well done side. As with all my recipes this version is the healthier, gluten free variety . . . however these can be made in several other ways. use your own favorite italian breadcrumbs that are not gluten free. Use day old leftover rice, get take out sushi rice and really make your life simple, or get fancy and use risotto. Another option someone shared with me on Instagram is to try making them with cauliflower rice, sounds pretty yummy right?
