KDHAMPTONS FAVORITE ORIGINAL RECIPE: SWEET & SPICY CORN SALAD
Sweet corn is the ultimate ingredient for your best summer recipes, and what better way to prepare it than with delicious fresh veggies from your local Hamptons farmers markets? This KDHamptons original recipe is one of our favorites, so you just have to give it a try! Your guests will love it as much as we do!
Ingredients:
4 husks of corn [Corwith Farmstead, 851 Head of Pond Rd, Water Mill]
3 tbsp olive oil & 3tsp white wine vinegar
generous sea salt and ground black black pepper
half avocado, cubed
large handful of cherry tomatoes sliced
handful of chopped arugula and basil
small minced shallot
1 half lemon
2 tablespoons goat cheese [Catapano’s is my favorite] dusted lightly with Cayenne Pepper
2 cloves of garlic minced
1 thinly sliced radish
Directions:
Slice tomatoes and put in mixing bowl with, olive oil, vinegar, shallot, garlic, salt & pepper, and lemon. Mix and let sit.
Bake the corn [in husks] for 25 minutes at 350′, let cool and cut corn off the cob and put in large bowl.
Combine all ingredients in large bowl. Mix in chopped arugula and basil, goat cheese and serve.
