KDHamptons FEAST END Recipe of the Day: Martha McCully's Purple Cauliflower Soup! [PSSST...only takes 20 minutes!]
I love sharing fun, new recipes with my foodie friends. This week I heard from East Hamptonite, Martha McCully, a longtime friend from our days working together at Allure magazine. Martha is always the person I go to when I am looking to eat healthier, without starving, or sacrificing the great flavors that make up the Hamptons culinary comfort food scene. Check out her easy [and pretty] recipe for Purple Cauliflower Soup below:
Martha shares, “I started making “Cauliflower Mashed Potatoes” when I tried the South Beach diet once….no potatoes, just cauliflower. This time, I had purple cauliflower from the farmer’s market, which I steamed and put in the blender with some Parmesan cheese. The easiest thing in the world, right? Well I pureed a bit too long and the ‘mashed potatoes’ turned to soup~ et voilà! I had created the perfect mono-meal dinner, with a whole head of cauliflower. So good, and it keeps the color purple, so to speak!
Since over 50% of households are single people [or people who live alone], mono-meals are a must for me. When I eat, I don’t make a little of this or a little of that, I make ONE thing and eat the WHOLE thing. Like a head of broccoli… or cauliflower!”
DIRECTIONS:
*STEAM ONE HEAD OF PURPLE CAULIFLOWER
*PUREE WITH HALF A CUP OF PARMESAN CHEESE
*ADD SPLASH OF OLIVE OIL TO THIN
*SEASON, STIR & SERVE
