KDHamptons Perfect Menu For A Sunset Dinner on the Beach
When the weather forecast is clouds & rain for the rest of the week in the Hamptons I whip up an easy dock to dish dinner for a Monday date night with Doc. Watch my igtv video to see what I put together HERE:
MENU: A simple Tzatziki @oshensalmon salad over farm fresh veggies, sliced blue cheese & watermelon on the side, and chilled sparkling @mionettoproseccousa rosé minis. Head to Flying Point beach for a sunset swim and dinner.
INGREDIENTS:
2 OSHEN salmon fillets, poached and flaked
1/3 cup chopped scallions
2 tablespoons dill, chopped
1/2 teaspoon sea salt
Fresh black pepper
2 teaspoons lemon juice
1/2 cup Tzatziki
DIRECTIONS:
Poach salmon for 8 minutes. The salmon is done when it flakes easily with a fork. Set aside to cool while you slice and place the veggies for the salad. Mix the scallions, dill, salt + pepper, and homemade Tzatziki by Chef Elena to a bowl. Gently break the salmon into flakes and mix all together.
Arrange in a shallow dish and chill while you pack the cooler, a couple @etu.home baby serving boards and my chic beach bag from @quiltedkoala, a pretty tablecloth for a beach blanket from @dayswithdarviny and then head to the beach! #perfectnight
