NEW KDHamptons Recipe: Easy Gazpacho Soup
When I’m traveling I love to collect easy delicious recipes to make at home and share with readers. Today I enjoyed the most delicious chilled Gazpacho soup at the Emirates Palace in Abu Dhabi. The chef shared the simple recipe below. Enjoy!
Ingredients:
5 vine tomatoes [best if soaked in water overnight]
½ cucumber
1 yellow pepper
1 green pepper
1 clove garlic
1 medium red onion
1 hot pepper
1 cup tomato juice
1 tbsp red wine vinegar
½ tsp sea salt & freshly ground pepper
Instructions:
Blend half of cucumber, peppers and onions to a blender (or food processor) until veggies are finely chopped. Remove and set aside.
Combine tomatoes with the remainder of the vegetables, and hot pepper to blender until finely chopped. Add in the tomato juice, red wine vinegar, sea salt and ground pepper and blend until smooth.
Combine the chopped veggies with blended mixture and stir until it forms a thick, chunky soup.
Refrigerate container for 3 hours to allow flavors to come together.
